Caribbean Curry Crab
Possibly the best curry dish you will find usually served with Caribbean dumpling (see “Batters/Doughs” for Caribbean dumpling recipe).
4 large crabs (clean and cut into pieces)
1 tsp. of minced garlic
1 tbsp. of minced green seasoning
1 cup of coconut milk
1 tsp. of salt
1 hot pepper
1-2 cups of water
2 tbsp. of butter
1/2 cup of chopped onions
2 tbsp. of curry powder (your preferred brand)
1 tsp. of black pepper
1. Heat butter and saute garlic, ginger, green seasoning and onions.
2. Mix curry powder with coconut milk, add to buttered combination and cook for a minute.
3. Add crab, black pepper, salt and hot pepper: bring to boil and cook for 5-7 minutes.
4. Lower heat, cover properly and cook for 25-30 minutes.
5. Taste test and alter salt and black pepper if necessary.
