Tabasco or any sauce made with peppers and vinegar

I saw a show on how it is made..its like making wine..very cool...they
take old whiskey barrels and put the jalapeno mash into them with vinegar
and seal top with salt and let ferment for months .

Oh sometimes I add mustard..each small change effects the taste but all is
delicious!

I like it on meat and if you add soy sauce and more sesame and less mayo it's
a yummy asian sauce.
