Default Dry-brining turkey

Some folks I've talked with have said that this produced a dry turkey. The
moisture, as one would expect, was pulled from the bird but was never
resorbed. If I were to do it for the first time, it wouldn't be for a major
holiday meal. I would experiment with it dometime else during the year.
