Yes, I did see that and it is a concern I have. I've considered going with
a offset charcoal and/or lump but I don't want to have to tend to the coals
every 30-60 minutes. Thats why I was looking at gas or electric.

My initial goal is for ribs, brisket, jerky and then move onto other meats
like salmon and chicken. I've been paying attention to the WSM mentioned in
previous posts. Any other suggestions for an all around Smoker, Grill?

Am I having too much tunnel vision excluding charcoal or lump?
