Something *different* for today, very different!

In keeping with the VD theme and perhaps 'score' a little extra in the
bedroom tonite ;-)

I have never made this for the SO before. It will be interesting to
see her reaction. This is an old recipe of mine that I have modified
and adapted over many years, so be assured *my* version is special and
unique.

Spotted Dick:

ingredients

* 1 cup (150g) self-raising flour
* 1 cup fresh white breadcrumbs
* 90g prepared suet mix*
* 1/3 cup (75g) caster sugar
* 1/3 cup sultanas
* 1/3 cup mixed peel
* 1 egg
* 2/3 cup (160ml) milk
* 2 tbs demerara sugar
* Custard, to serve

Method

1. Grease and line the base of four 200ml dariole moulds.
2. Sift flour into a bowl, then add breadcrumbs, suet, sugar,
sultanas and peel. Combine egg and milk, add to dry ingredients and
beat well to combine. Spoon into moulds. Make a pleat in the centre of
a sheet of baking paper (to allow for expansion) and use to cover
pudding. Secure with string, then cover with foil.
3. Place moulds in a saucepan, add water to come halfway up the
sides, then bring to the boil. Cover, turn heat to low and steam for 1
hour. Remove and cool for 10 minutes. Turn out onto plates, sprinkle
with demerara sugar and serve with custard.

Notes & tips

* * Prepared suet is from supermarkets.
* Get the most out of summer with salad recipes, the barbecue
recipes collection, picnic recipes and plenty of low kilojoule recipes
for a top start to the New Year on Taste.com.au

I strongly suggest sticking to my version of this dish as the changes
I have made wont work well unless the details are strictly adhered to.

Anyway, will try to take pics of finished result and maybe even the
SO's face when presented with it!
