Strawberries are on sale here and I bought too many. I decided to try using
them in a layered Jell-O salad. I mixed up a package of sugar free cherry
Jell-O (would have used strawberry, but cherry was all I had), using about
1/2 cup less water than what it called for. Let it almost set up, then
added sliced, fresh strawberries. Didn't need to add any sweetener to the
berries. Put that back in the fridge, then mixed up a package of sugar free
lemon Jell-O, again, using about 1/2 cup less water than what it calls for.
Let that set up a bit, then whipped in 16 oz. of cottage cheese. Poured
this over the top and let set up. It is making a yummy breakfast and it's
great for a hot day! You could also use cream cheese in this recipe, but I
prefer the taste of cottage cheese.

My mom used to make this a lot, using lime Jell-O and pineapple or pears for
the bottom layer. That's very good too. But I've found that strawberries
don't have much effect on my BG. And I was looking for something to do with
them!
