Default Oak Whiskey Barrel Chunks?

Would white oak whiskey barrel chunks work as well as oak chips?

I know a few people that make wine in used Bourbon barrels. How do they do
it, filter the wine?


Unless they like the taste of barbecued wine, they shave the inside of the
barrel before putting wine into it.
