After the addition of lysozyme, the wine cleared beautifully.
I then stirred the lees (containing bentonite from my original fining attempt), and again, the wine cleared. It is now a gorgeous, shimmering, golden color. And its pretty tasty, too. We are going to bottle this weekend. Thanks to all for your help. --Lee |
