Default Newbie wants info on Strawberry wine

May is coming and soon the local market will be selling local strawberries.
I want to make a wine for my husband (I hate strawberries) and I've been
told just to press them and use the juice. Is that the best way? (like
don't cook them and put everything in the primary???)

Hi There,

I have a old english recipie you might like to try.

1 lb of Strawberries
1/2 pint white grape juice concentrate
2 1/4 lb white sugar
1/2 tsp. tannin
Yeast
2 tsp. citric acid
1 nutrient tablet
Water to 1 gallon

Crush the strawberries and dissolve all the ingredients in 3 quarts of cold
water.

Ferment the pulp for 7 days stirring twice daily, then strain out the fruit,
top up with cold wter and continue fermentation but finish slightly sweet
rather than dry. This makes a very delicate rose wine of subtle flavour.
Serve cold.


Alternatively you can try this recipie at any time of the year.

3 lb of Strawberry jam
1/2 pint white grape juice concentrate (or a mixture of red or white)
1 lb white sugar
1/2 tsp tannin
1 Campden tablet
Yeast
2 tsp citric acid
1 tbsp Pectolase
1 Nutrient tablet
Water to 1 gallon

Dissolve the jam in 2 quarts of warm water and when cool add the acid,
tannin, Pectolase and Campden, cover and leave for 24 hours in a warm place.

Next day stir in the other ingredients and ferment for 7 days.

Strain out the solids, top up with water and ferment as usual but finish the
wine slightly sweet.

Enjoy
