I went there one year for vacation. I think it was just south of Cancun.

I would like to make a small batch of capsicumel but do not know in
what stage should I add some jalapenos? Into primary fermenation
bucket? And how much of chilis to add in order to have let say
medium-hot final product? Anybody has a personal experience with
capsicumel?

Tee, go to http://winemaking.jackkeller.net/request.asp and scroll
down to "Capsicumel" for three recipes. Take out the seeds for milder
heat, use fewer jalapenos for even milder heat. Also, see recipe in
October 1st, 2003 entry at
http://www.homebrew.com/wine_cellar/wineblog.shtml.
