Is it Ok the make wine from hawthornberries? I've picked a couple of pounds
but I can't find any recipes in any of my books apart form an elderberry and hawthorn one in a CJJ Berry book. My copy of Tayleur (dating back to the 70s) says hawthorn berry is now thought to be inadvisable, doesn't say why, presumably something in the seeds maybe. -- Malc R1100RS old and tatty You laugh at me because I am different I laugh at you because you are all the same |

I found this recipe in Country Wines Beers & Beverages (Brian Leverett, The Croward Press (UK) ISBN 1 85223 009 6). 1Kg Hawthorn berries 1.25Kg sugar 1 Litre red grape juice 2 lemons Wine Yeast Discard black berries, remove twigs. Crush Berries and cover with 2.25 Litres of boiling water, stand till safe to handle. Then to the hot mixture stir in sugar. Allow to cool to 65-70F and add grape juice, juice of lemons and yeast. Ferment for 12 days before straining and transferring to a 1 Gallon demijohn. Fill to the neck with water and fit an airlock. Main fermentation takes about 10 weeks. Rack, and leave until bubbles cease. R. |
