I have some white wine sitting in a 23 liter carboid and lees has
settled in the bottom. I would like to add some finning material because the wine is not clear and I am anxious to bottle it. My question is this should I rack the wine of the fine lees and then add the finning material or should I just add the finning material and stir up the sediment and would the wine clear as well? I was once told that the finning materials require something to adhere to. |

If you are using the kieselsol/chitosan product, you can rack first, then follow the directions on the pack for fining addition. If the wine has not had an addition of metabisulphite lately, it would be prudent to add 1/4 teaspoon of sulphite as well. |
