I bought some wine recently.

Once you open it, does it go in the fridge?

And, do you need to re-cork it?

I re-cork it in a smaller bottle (to minimze the air) and put it in the
fridge. When I want to drink some, if it's a red wine I pour it into a
glass, and microwave it for ten seconds (depending on the power of your
microwave). Just enough to take the chill off. Then I pour it from
that glass into my good wine glass (I don't nuke the wine glass).

Next question would be "how long does it last" (in the fridge) - if you
have very little air in the bottle, it should last weeks (though I
haven't tried it). If you use a Vac-U-Vin or its clones and pump it
down, but it's still (say) half a bottle in a full bottle, it may last a
week - whites go faster. I've found that after a week the wine is
noticably on the decline in that state, though it depends on the wine
and the ullage. (google - define:ullage)

If you leave the wine uncorked in the fridge, it will pick up flavors
you probably don't want in the wine, unless it's not a very good wine to
begin with, in which case you might as well pour in some tabasco.

If you are new to all this, you may not be able to tell the difference,
but just for fits and giggles, try an experiment. Open a bottle of
wine, pour out a glass for yourself, then get a small bottle (say, a
champaigne split or a 12 oz beer bottle) and pour some of the rest of
the wine into it and re-cork it so that there is no air space at all -
the wine is spitting out the cork as you put it in. (note, some corks
might not fit some bottles - test first). Re-cork the original bottle,
put them both in the fridge, and drink the glass you poured yourself,
paying attention to the flavors (do this after not eating anything
special, except a few crackers or something like that, so that the
flavor of the food doesn't affect your impression of the wine).

Come back in two weeks and then drink a half glass from each of your
stored bottles, and compare them. Try to remember how the wine
originally tasted (again do it after just crackers or such).
