The Atkins diet,as well as a food combining diet I have read, both
disallow milk, yet allow cream. Can anyone explain this. With thanks.

Had to find it!

Here it is:

You basically take a half kilo of quartered mushrooms (even regular cepes will
work, but chanterelles are superb) in a pan with a litre of heavy cream, and
simmer until it (all of a sudden) thickens and takes on a golden colour - about
an hour. Add a little dry Sherry and some chopped fresh sage (rosemary is also
very good) and simmer a bit longer. Serve over toast or in patty shells.

The wonder of the dish is that while it pairs exceptionally well with mature
red wines, it is so flexible that it also works very well with acidic young
Rose, and many white wines.

You can make it with whatever sort of 'shrooms are available to you and the
flavour of even 25% chanterelles, for instance, permeates the rest quite
nicely, although the best is certainly to make it with 100% of whatever
mushroom you want to feature.

Milk has carbohydrates..... and, quite frankly, you *can* drink it
if you want on the atkins diet, just make sure you account for the
carb count when you tally your daily carb intake.... especially on
the initial induction phase. Furthermore, and contrary to other
diets before it, the atkins diet says to stay away from skim milk
because there is no fat in it to help counter your body's absorption
of the carbs; if you are going to drink milk, drink viteman D whole
milk.

Heavy cream is allowable because it has zero carbs.

Has carbs (from lactose) but negligible as it's more fat/lipids (cream)
and less lactose.

And if the health nuts complain, tell them it is Atkins friendly (the cream has
less lactose than the equivalent amount of milk).
