It has been some time since I have had any true "Champagne" to enjoy, budget
dictating that I search out bottles from this hemisphere which must legally
be labelled "Sparkling." This is not to denigrate some of the delights that
I have experienced from California and New Mexico. There was a time in
years past when Dom Perignon and Louis Roederer Crystal would occasionally
grace my table. Sadly, the realities of today's world have closed that door
forever.

Last night, I opened a tin of refrigerated lump crabmeatfrom the
Philippines. Previous efforts in this vein utilized lump crabmeat from
Indonesia. Either the crabs are excellent long distance swimmers or they
have a very close genetic relationship with their brethren across the
reaches of the Pacific. I could not tell the difference between the two
origins. They were prepared as my simple oven broiled basic crab cakes
(read that "watching the waistline") method for three minutes per side
under high heat setting.

The accompaniments were Basmati Rice and steamed fresh asparagus, which was
slathered with a Balsamic syrup reduction.

The cork was withdrawn as soon as I had placed the dishes on the table.
What greeted my nose was a clean slightly toasty aroma. There was very
lively and long lasting effervescence, crisp apple-like acidity, and a very
long finish to complete the picture of the wheat colored beverage.
The Buyers at Costco did their job well this time. Factoring in the price,
I would unhesitatingly give it an "18" on the Davis twenty point scale.
