Default Egg-free Mayo

On the back of the Ener-G Egg Replacer package is this recipe which I used
successfully. It wasn't bad. But next time I will use half the sugar. I
used a stick blender.

Egg Free Mayonnaise

6 teaspoons Ener-G Egg Replacer (PACKED)
4 tablespoons water
1 teaspoon sugar
1-1/2 teaspoons vinegar (I used white wine vinegar)
2 teaspoons dry mustard
1 cup oil (I used olive oil)

You can also use

1 mug oil
1 mug warm apple sweetened soya milk
Juice of half a lemon
Tablespoon Mustard
Clove of garlic

Add the lemon juice and mustard in whilst blending with a stick blender
(not a whisker)

Best Wishes

Tony

Would it be possible to substitute vegetable oil instead of olive oil?

Regards

Well when I make mayo (with egg) I use canola oil. Because I dislike
the taste of olive oil mayo. So I imagine you could use whatever you
wanted as long as it was 100% oil and a liquid.

1 egg.
1 to 1.5 cups canola oil.
pinch of both salt and sugar.
1 tbsp of garlic or more (to taste).
1 tbsp of grainy mustard.
juice of 1/2 a lime.

Put everthing in a jar that a wand/stick blender will fit fairly snug
in and starting at the bottom run the blender thru the mixture slowly 3
or 4 times.
