On the back of the Ener-G Egg Replacer package is this recipe which I used
successfully. It wasn't bad. But next time I will use half the sugar. I used a stick blender. Egg Free Mayonnaise 6 teaspoons Ener-G Egg Replacer (PACKED) 4 tablespoons water 1 teaspoon sugar 1-1/2 teaspoons vinegar (I used white wine vinegar) 2 teaspoons dry mustard 1 cup oil (I used olive oil) Dee |

Would it be possible to substitute vegetable oil instead of olive oil? Regards Sue Well when I make mayo (with egg) I use canola oil. Because I dislike the taste of olive oil mayo. So I imagine you could use whatever you wanted as long as it was 100% oil and a liquid. 1 egg. 1 to 1.5 cups canola oil. pinch of both salt and sugar. 1 tbsp of garlic or more (to taste). 1 tbsp of grainy mustard. juice of 1/2 a lime. Put everthing in a jar that a wand/stick blender will fit fairly snug in and starting at the bottom run the blender thru the mixture slowly 3 or 4 times. -- No Bread Crumbs were hurt in the making of this Meal. Type 2 Diabetic Since Aug 2004 1AC- 7.2, 7.3, 5.5, 5.6 mmol Weight from 265 down to 219 lbs. and dropping. Continuing to be Manitoban |
