Default I just ate some very old tempeh !


...... sell by date jan 2004, it had been alternately frozen and thawed in
my neglected fridge so had dried out a bit (moisture had turned to ice in
the bag)

tasted very nice lightly fried with a little soy sauce

since I can't lay my hands on my Shurtleff and Aoyagi book. can anyone tell
me if I'm likely to keel over soon ?

meanwhile methinks it's time to build my incubator .. every kitchen should
have one :-)

In the meantime, you can try using your oven with the light on.

I'm hoping to pick up a heated propogator tomorrow.

Is it as easy as yoghurt ? ... will I be successful just using thawed out
frozen tempeh as a starter if I use a fairly large amount of it or do I have
to keep a culture going ?
