Default tofu kale spaghetti

I don't have a recipe, but my wife had the cool idea to make tofu/red kale
spaghetti (sometimes with whole wheat noodles). It's become my favorite
way to eat kale - it doesn't seem so tough this way. The tomato sauce
works very well with the kale, and the tofu is nice after it soaks up
the sauce too. I especially like it when the tofu has been frozen and
thawed, because it gets a more substantive texture that way.

Another nice way to eat kale is to rinse it and then bake it in a
moderate oven with just the water clinging to the leaves after
draining. It sounds very silly but it goes all crispy and lovely.
A great snack food.
