Default Frugal Vegan Chocolate Cookie Recipe

My 2 year old son has Dairy, egg, peanut alergies and the local "health
food" store vegan cookies run about 5.00 a box of 12. I found this to be a
frugal and acceptable alternative...( Tasty too!)


2 Sticks margarine (or 2 cups soy margarine or Vegtable shortening)
2 Cups white Sugar
3 teaspoons ener-g egg replacer
3 tablespoons water
1 ts Vanilla extract
2 cups white flour
1 ts Baking soda
½ ts Salt1
1 cup unsweetened cocoa


1. Preheat oven to 350 F
2. Mix margarine and sugar together until light and fluffy. Add egg replacer
and vanilla and mix well.
3. Mix dry ingredients together and stir in, mixing throughly.
4. Bake on the prepared cookie sheet on the middle rack for 8-10 minutes.
Remove from oven while cookies are slightly soft.
Cool on the baking sheet for 5 minutes before transferring cookies to a rack
to cool completely.
