I can't find my copy of the orginal recipe. It was one an Art History Prof.
collected on his travels in Mali. The orginal called for Chicken, I've since veaganised the recipe and added my own touches Spicy Peanut Stew 1 large onion diced lots of diced garlic 1 tablespoon olive oil diced fresh spicy peppers of your choice and amount. (if you don't have fresh peppers see below) *In a big pot saute the onions and garlic until tranparent. Add 1 qt. vegetable broth or un-chicken broth 2 cups cubed sweet potatoes 2 cups chopped collard greens salt, black pepper you can look through your fidge and see what else you have and throw it in. Green Peppers, califlower,brocolli, celery... *Let this simmer until vegetables soften. Add if you like some chicken-style seitan (my fav is http://www.lightlife.com/chickstrips.html) or you can add a can of black eyed peas, or chickpeas. it is your choice. 1/2 cup natural peanut butter. NOT Skippy, Jif, Peter Pan or anyone of those corn syrup products. That is a rant for another post. if you didn't use fresh peppers add cayenne pepper juice of one whole lemon adjust seasonings to your taste, add more Veg broth if stew is too thick. Serve over Brown Rice and garnish with chopped peanuts, raisins, dried banana chips, diced red onion. |

I saw your post the other day mentioning African Peanut Stew and I went to the web to search for a recipe. The one I liked the most is strikingly similar to what you have posted here. The basic recipe is Broth, Peanut Butter, spice and whatever vegetables you want. I never make it the same twice. I thought I'd posted a variation before but couldn't find it in Google. -nancy- |
