Spaghetti with Vodka and Chilli
250g/ 8oz spaghetti 1 tbsp olive oil 2 small chillies, deseeded and finely chopped 2 tomatoes, skinned, deseeded and finely chopped 4 tbsp vodka 4 tbsp soya cream salt and fresh ground black pepper cook pasta in plenty of boiling water for 10-12 minutes or until tender. Meanwhile, heat the oil in a small frying pan, add the chillies and tomatoes and cook for 4 minutes. add the vodka and simmer rapidly for about 3 minutes. stir in the soya cream, bring to the boil and remove from heat. season to taste with salt and pepper. Drain pasta well and toss with sauce. Divide into bowls and serve. |
