Default john dory fin

I finally found a good sushi place in Melbourne, Australia. It was a bit on the pricey side, but excellent...

The Itamae picked out some great selections for me including John Dory fin meat. I have never had this before and it was beautiful. He slightly cooked the fish the taste of the fat is still lingering in my mouth.

Just a couple of questions...

Is this a common fish to use for sushi?

Does anyone know what this is in Japanese, I omitted to ask the Itame?

Has anyone else had it and what are your thoughts?

Yes, it is called Matoudai in Japanese. Also Kijihata or Umazura
(horse-face).
Not a common neta for sushi, although in regions where available it is
prized as
sashimi. Not commonly found in Japanese supermarkets or as sushi neta.
