Its not the same. But if you cover it then it should stay somewhat moist for a while. I know they do it with the grocery store version. As to how long it would be safe to eat I would say at least a few days. Probably even a week since the items that go into most sushi would be safe for up to a week if kept refrigerated. I think you'd have to wrap each piece to actually keep the moisture in.. I've had day old that was in a covered container and it was hard and dry. Super market sushi lasts for less than a day.. I would hope they'd toss anything from the previous day. It would be safe for a few days, but it won't be very good. -- Dan |
