Default safe period for leftover rolls?

If you take leftover rolls home, anyone know how long they can stay in
teh fridge before they might become dangerous? I figure 2 days (tho
the rice would be pretty hard by then).

I've had day old sushi, even 4 hour old sushi thats sat in the fridge,
and although it was safe to eat.. the rice gets hard and dry. Its not
the same.

But if you cover it then it should stay somewhat moist for a while. I
know they do it with the grocery store version. As to how long it
would be safe to eat I would say at least a few days. Probably even a
week since the items that go into most sushi would be safe for up to a
week if kept refrigerated.


I think you'd have to wrap each piece to actually keep the moisture in..
I've had day old that was in a covered container and it was hard and dry.
Super market sushi lasts for less than a day.. I would hope they'd toss
anything from the previous day.

It would be safe for a few days, but it won't be very good.
