Default Sushi book

Hi,

I am looking for a good (!) book on how to make Sushi.
It should be a compendium covering all topics, like what fish, how to
prepare the fish, how to cook the rice, how to role the makis, how to make
nigiri etc. etc.

Any recommendation ?

Assuming you're German, I'd suggest "Sushi zubereiten und geniessen" by
Kimiko Barber and Hiroki Takemura. It covers pretty much exactly what
you're asking for. IIRC, the english version was discussed in this group
before as well.

Cheers,
Uli
