I'm a big fan of serious sushi. Those who have been to Yasuda Sushi in
New York City have experienced one of the best examples of serious sushi in the US. Now he has expanded his website to provide some of his philosophy on sushi. This is a must read for all of you. It comes pretty close to defining what I refer to as 'serious sushi,' down to the fact that Yasuda-san will change the density of the rice with his hand to fit the characteristics of the fish.
