Actually, you've pointed out the one other unique element in this
bake--for the first time I used rice flour instead of regular APW to dust the linen towel that lined the glass proofing bowl. My first response on seeing the loaf in flames was, "Ohmigod! The rice flour caught on fire!" But I didn't think there was really enough to do the trick (i.e. I've baked other loaves with A LOT more AP residue on them when they went into the oven, without incident). On the othe hand, it was my first experience with the stuff, so what do I know? Is rice flour supposed to be more combustible than wheat?
