Default sourdough, yet not sourdough


Refreshingly different, yet the same...

Bread made using sourdough culture, without any warm temp fermentation
except to wake up small starter inoculation from the fridge, totally fridge
matured, 3 or 4 days at least. No sour taste, but very flavorful. Has
characteristic long self life of sourdough, can leave on counter for many
days open to air, cut end down on board, remaining yummy for days without
growing "sourness". Perhaps not what Egyptian peasants could have made, but
very good, and very convenient.

Question:
If sour type flavors don't develop, why is the bread retaining good shelf
life? I thought this was a product of the "sour" making organisms.

A pity you didn't include a recipe.

Questions back at you -

1. What flour(s) did you use? Low ash content minimizes sour.

2. How long did it rise at room temperature? Some room temperature
rise is a good thing.

3. Has this starter ever produced sour loaves? If so, what have you
changed? If not, and you want sour, you need to work on maturing your
starter more. Samartha commented that it takes about a month of room
temperature feedings for the sour part of the equation to fully get there.

Yes, you have succeeded, as far as blurriness is concerned.

Mike, it was not my intention to create a sour bread, nor was its absence
considered a failure, this was just a continuation of my flavor experiments.
Yes this starter creates sour with warmer fermentation normally. I just
wanted to see how "zero" warm time would effect the bread. As sourness did
not develop at all, I assumed that shelf life would be less also. Not that
bread hangs around long enough here to really test shelf life, but it
certainly seems to hold up well.

I dunno why you are taking such bad pictures, but maybe it is
about your camera. Just in case that happens to be, here is
some news:

www.heartlandamerica.com today is offering the Fugifilm
FinePix A205 digital camera for $79.95. Here is a description:

That camera will take a picture which will fill a 1800 x 1600 pixel
screen. That is much bigger than is needed to show a loaf or slice
of bread. The camera has a macro (close-up) mode, and, of
course, focuses automatically and has automatic electronic flash.
It takes AA batteries or NiMH rechargables, which, by me, is a=20
plus.

I am not personally familiar with that or any FinePix digital=20
cameras. But I can report that a whole lot of resolution is not
a necessity for web photos. Do you remember these shots?:

Well those were taken with a 0.8 MP camera, compared with
the A205's 2.0 MPs. The 0.8 MP camera is not focusable,
but has a close-up mode. It was marketed by Polaroid.

Of course, you may be posting those terrible pictures just to
irritate me. Well, listen, if you get the Fugi camera mentioned,
you can post 1600 x 1200 pixel photos with attempting to=20
reduce them to manageable picture files, and that will irritate
me just as well.

Oops -- 1600 x 1200 pixels. But still plenty of room for a loaf
and a slice, and then to trim away the rest of the kitchen.

P.S. I think 640 x 480 is a good size for a web shot.
