Default sourdough starter

My starter gets a DARK liquid on the top. What is this? Do I mix it back in
or pour it off?

Hi Nicki,

It is called "hooch", is nothing to worry about, should be mixed back
in, but...

It is a signal that you are not feeding the culture frequently enough.
Increase the feeding schedule, and you will see no more hooch.

All the best,
