Default That Extra Starter

Haven't used my Carl's starter for a few months, vacation and a low carb
diet... But got invited to a potluck on Friday and told to bring my SD
Banana Bread. In trying to revive my starter now have tons of extra starter.
Because I'm still on the diet, can't use pancakes to use the extra. I need
recipes for potlucks or stuff to drop at neighbors. Plan to try a SD
Chocolate Chip cookie recipe I found.

Since I'm on the low carb diet (it is working but I miss my SB bread) don't
have many bananas in the house (have a few frozen ones for Friday) and it
will take a week to ripen more for other bread. The extra starter needs to
be used ASAP. So... anyone have recipes for making other batter breads like
the banana bread? I was wondering about drained canned peaches, or dried
apricots, cranberry?? The Banana Bread recipe was posted on this list a
couple years ago and may be in the FAQ Recipes. Other suggestions for the
extra starter? Thanks, Woody

If you can find ripe plantains, try making the same banana bread with them.
Ripe plantains are edible uncooked, just like bananas but have a somewhat
different flavor. Same consistency.

Try them, you will find the flavor just wonderful.

I won't try to steer you off your low-carb diet, but you might think about
whether whole-grain fits into your agenda. The primary benefit of low-carb
diets, as I understand them, is related to insulin production because
of the high glycemic index of most carbs (especially white flour products
and potatoes, and of course sugars). Whole-grain wheat products are much
better in this respect. You may not have to give up your SD, just start
doing it whole grain.

I am not a doctor, dietician, or expert, but I have been reading up on it
and have a vested interest in that diabetes runs in my family and I am
trying to be preventative. Check out the Sugar Busters book (I'm less than
impressed with its presentation and sensationalism but find the
information it presents makes sense and is accurate as far as I can tell),
if you haven't already.
