I'll be visiting Des Moines for a week in October and was wondering if
you all had any recomendations for restaurants.

What I'm most interested in are local establishments that reflect
regional tastes.

This may not be of much help, but we were there in late June. Looking
for a good grass-fed steak and staying in Clyde, we drove over by the
airport to what I recall was Crimmins Cattle Company. It was not a good
experience. Don't need to relate the gory details, but I then heard
that 801 Steak & Chop House
(515) 288-6000 801 Grand Ave # 200
would have been a better choice, but we were traveling extremely casual
... the 801 has a Web site.
