Falls Terrace Potato Crusted Fish

Makes 1 portion

Ingredients:

1 pound Washington Russet potato
1 (6 ounce) salmon or halibut fillet
1 cup seasoned flour*
2 eggs, whipped
vegetable oil as needed
salt as needed
ground white pepper as needed

Preparation:

Precook or parboil potatoes, drain and cool. Peel and shred potatoes.
Place in shallow pan.

For each serving, dredge fish steak in seasoned flour. Dip fish in
eggs, place on shredded potatoes and press to coat both sides with
shredded potatoes. Pan-fry until browned on both sides.

Finish in 375 degree F oven 10 to 12 minutes or until fish is cooked.
Season to taste with salt and pepper.

*Season 1 cup flour with 1/2 teaspoon salt and 1/4 teaspoon ground
black pepper; mix well.

To serve: Serve with salad or cooked vegetable.

Variation: Thinly sliced 6-ounce beef steak may be used in place of
fish.
