Pumpkin Chocolate Chip Cookies
Ingredients: 1 1/2 c. sugar 1/2 c. butter or margarine 1 egg 2 1/2 c. flour 1 tsp. baking soda 1 tsp. baking powder 1 tsp. cinnamon 1/2 tsp. salt 1 c. cooked or canned pumpkin 1 tsp. vanilla 1 c. chocolate chips 1 c. chopped nuts Directions: Cream together sugar, butter or margarine and egg. Sift together flour, baking soda, baking powder, cinnamon and salt. Add alternately to creamed mixture with pumpkin. Stir in vanilla, chocolate chips and nuts. Drop by teaspoonfuls onto greased cookie sheet. Bake in 350-degree oven for about 10-12 minutes or until done. Note: You can also use raisins for the chocolate chips or applesauce, or bananas, for the pumpkin. When I did these with bananas, I put in chocolate chips, walnuts and coconut.
