Texas Chili
2 lbs chili meat 1 ham hock 1 large onion, chopped 6 cloves garlic, minced 1 jalapeno pepper, chopped 1 16 oz. can tomatoes 4 Tbsp chili powder 1/2 tsp cayenne pepper, ground 1 Tbsp coriander, ground 2 Tbsp cumin, ground 1 tsp oregano, ground 1/2 cup red wine 2 Tbsp honey 2 Tbsp catsup salt to taste hot water Brown the chili meat with the ham hock, onion, and garlic. After this mixture is brown, drain the grease and add the rest of the ingredients, including enough hot water to make it soupy. Simmer on low heat for at least 2 hours. |
