Default Strawberry Cheese Pastry Tarts

Strawberry Cheese Pastry Tarts

1/2 cup of cold butter, cut in pieces
3/4 cup of all-purpose flour
6 tablespoons of sour cream
Sugar glaze, recipe follows
Strawberry cream cheese, recipe follows
12 to 18 strawberries, sliced
1 ounce of semi-sweet baking chocolate

Sugar Glaze:

Combine 3 tablespoons sugar and 1 tablespoon water in a small pan.
Stir over medium heat until sugar dissolves and glaze just comes to a
boil. Use hot.

Strawberry Cream Cheese:

Beat together: One 3 ounce package of cream cheese
1/4 cup of unsifted powdered sugar
2 teaspoons of strawberry jam
1/2 teaspoon of vanilla

With a pastry blender or your fingers, work butter into flour until
fine crumbs form. Stir in sour cream to stiff dough. Cover dough.
Chill at least 1 hour. Cut dough in half. Roll out one portion at a
time on a floured board to 1/4 inch thickness. Cut into 2 equal
rectangles. Re-roll scraps to make 2 more rectangles. Arrange
rectangles on an ungreased rimmed baking pan. Brush tops with sugar
glaze. Bake at 400ºF. for 15 to 20 minutes. Transfer to a rack to
cool. Spread cream cheese mixture evenly on pastries. Arrange sliced
strawberries on tops. Melt chocolate in a small pan, stirring
constantly. With a spoon, drizzle chocolate over strawberries. Makes 6
tarts
