Default Baked Swiss Cheese Fondue

Baked Swiss Cheese Fondue

3 cups of soft bread crumbs, crusts removed
1 1/2 cup of milk
6 tablespoons of butter or margarine
2 cups of coarsely grated process Swiss cheese
6 eggs, separated
1 3/4 teaspoon of salt
1 teaspoon of dry mustard
1/2 teaspoon of paprika
a dash of cayenne
2 tablespoons of instant minced onion

Combine the bread cubes, milk, butter and cheese, reserving 2
tablespoons of cheese for topping. Heat over low heat, stirring
occasionally, until the mixture is hot and the cheese is melted.
Remove from heat, let cool slightly. Beat egg yolks with salt,
mustard, paprika and cayenne until well mixed. Add cheese mixture and
onion, mix well. Beat egg whites just until stiff peaks form, gently
fold in cheese mixture. Turn into un-greased 2 quart casserole.
Sprinkle the top with reserved grated cheese. Bake in preheated 350ºF.
oven for 30 to 35 minutes or until the top is firm and golden. Serve
at once. Makes 8 servings
