Lemon Herb Potatoes

Ingredients:
4 large baking Potatoes
1/4 cup grated Parmesan cheese
3 tablespoons minced fresh parsley
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 cup margarine or butter
1 tablespoon lemon juice

Scrub the potatoes. Combine the Parmesan, parsley, paprika
and salt in a small bow; set aside. Cut potatoes crosswise into
1/4-inch thick slices. Soak potatoes in ice water for 10 minutes.
Combine the margarine and lemon juice in a glass bowl or a
measuring cup. Microwave on high for 30 seconds or longer
until the margarine is melted. Drain the potatoes and pat dry.
Arrange the potato slices, cut side up, in a microwave-safe
baking dish. Brush the potatoes with margarine mixture. Cover
and microwave on high for 12 to 14 minutes, or until tender.
Halfway through cooking, rotate the pan and turn the potatoes
over, and brush with the remaining margarine mixture. When
tender, sprinkle potatoes with cheese mixture. Allow to stand,
covered, for 5 minutes, then serve.
