Default Savory Roasted Potatoes

Savory Roasted Potatoes

Ingredients:
1 tablespoon olive oil
1 tablespoon chili powder
2 teaspoons minced garlic
3/4 teaspoon salt
1/2 teaspoon ground black pepper
4 large red potatoes, scrubbed
1 medium sweet onion, cut into wedges
1 1/2 cups halved cherry tomatoes
1/3 cup coarsely chopped fresh cilantro leaves
1 tablespoon fresh lime juice

Heat oven to 400 degrees F. Cut the potatoes lengthwise into
1/2-inch thick wedges. Lightly oil a baking sheet. In a bowl,
combine the chili powder, garlic, salt and pepper in a bowl.
Add the potatoes and onion and toss to coat evenly. Place
on the baking sheet in a single layer. Bake 25 minutes. Add
the tomatoes; bake an additional 10 minutes or until potatoes
are tender. Transfer all to a serving bowl or platter. Add the
cilantro and sprinkle with lime juice; toss lightly.
