Secret admirer fortune cookies
Ingredients
14 (3 x 1/4 inch) strips of paper
3 Tbsp butter, softened
3 Tbsp sugar
1/2 tsp vanilla
1 egg white
1/3 cup all-purpose flour
4 oz. semi-sweet chocolate
Directions
Heat oven to 400 F. Line 2 baking sheets with parchment paper.
Write a short note on each strip of paper. Use special dates for
lucky numbers. (Kisses & Hugs will be yours. 2 14. Love
surrounds you. 8 14 87.)
In a medium bowl, combine butter, sugar, vanilla and egg white;
beat at medium speed until well blended. Stir in flour.
Working in batches of 3, drop 1 1/2 tsp batter 4 inches apart on
baking sheet. Spread batter into 3 inch circles with back of a
greased spoon. Bake 3 to 4 minutes or until edges are light
golden brown. Working quickly, remove 1 cookie with spatula;
place on work surface. Place 1 fortune in center of cookie. Fold
bottom half of cookie to top; press edges with fingertips for a
few seconds. Holding top edge of cookie, place center of fold
over the rim of a small bowl. Gently press sides down to bend
cookie in middle; hold for five seconds. Place cookie in empty
muffin pan to retain shape while cooling. Repeat with remaining
2 cookies. Repeat entire process with remaining cookie batter
and cooled baking sheet.
Line a baking sheet with foil. Melt chocolate in microwave on
high for 1 minute (or until chocolate is almost melted). Stir
chocolate until melted (do not whip). Dip half of each cookie in
chocolate, letting excess chocolate drip off. Place cookies on
baking sheet. Refrigerate 5 to 10 minutes or until chocolate is
firm.
Store cookies in air-tight container.
