Default Comforting Blueberry Muffins

Comforting Blueberry Muffins


Servings: 12 Muffin servings.


What you need:


Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 3/4 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup sugar
3/4 cup milk
1 egg
1/3 cup butter -- melted
1 1/4 cups blueberries -- fresh or frozen


Ready, set, cook!


1. Preaheat oven to 400F. Grease a 12 muffin baking pan; set aside.

2. Combine flour, baking pwoder, salt and sugar in a large bowl.

3. Combine egg and milk in a small bowl. Add egg mixture to flour
mixture
along with butter. Stir in blueberries and mix lightly to combine.
DO NOT overmix, it should be lumpy.

4. Using an icecream scoop divind batter equally into muffin tins.

5. Bake for 16-20 minutes or until a wooden pick insterted in the
center
comes out clean. Cool in muffin pans before removing.

3g Protein; 25g Carbohydrate; 31mg Cholesterol; 215mg Sodium
