Apple Brown Betty
-------------------------------------------------------------------------------- This old-fashioned recipe is as good today as it was when Grandma made it. 2 cups soft bread crumbs 1/4 teaspoon salt 1/4 cup melted butter or margarine 4 cups tart sliced apples (4 medium apples) 3/4 cup brown sugar 1 Tablespoon ground cinnamon 2 Tablespoons fresh lemon juice grated rind of lemon 1 cup water (room temperature) Preheat oven to 350-degrees F. Mix the breadcrumbs with the salt and melted butter or margarine, and divid the mixture into thirds. Place 1/3 of the mixture into a greased 1-1/2 quart baking dish. Sprinkle your apples with sugar, cinnamon, lemon juice and grated rind; toss to blend. Place one-half of the mixture on top of the crumbs in the baking dish. Add another 1/3 of the crumbs. Add remaining apples, and the final layer of crumbs. Trickle the water into the side of the dish. Try not to moisten the top layer of crumbs. Cover and bake in the oven for 30 minutes. Remove the cover and continue to bake until the apples are tender and the crumbs a delicious deep brown. (Usually about 20 to 30 minutes more.) Serve warm with cream or custard or top with a scoop of vanilla ice cream. Makes 6 servings. -------------------------------------------------------------------------------- |
