Canadian pea soup
Ingredients 1 lb dried whole or split peas 1/2 lb salt pork 12 cups of water 3 medium onions, minced 2 carrots, cubed 2 or 3 bay leaves 1 handful chopped celery leaves a few sprigs parsley, chopped 1 tsp savory Directions Wash and drain the peas. Put in a large pot with all the other ingredients. Bring to a boil and boil for 2 minutes. Remove from heat and let stand for 1 hour. Bring to a boil again, reduce heat and simmer covered for 1 hour, or until the peas are done. Season with salt and pepper. |
