Wild Rice Turkey or Chicken Casserole



1 (13 oz.) box white and wild rice mix

(I use Uncle Ben's Original)

1 4 oz. can sliced mushrooms

3/4 c. chopped onion

6 Tbs. butter, divided

1 1/2 c. heavy cream

3 Tbs. Parmesan cheese

2 tsp. salt

1/4 tsp. black pepper

3 cups cooked diced turkey or chicken

1 cup water, into which is dissolved

1 chicken bouillon cube



Cook rice according to package directions. Saute mushrooms and onions

in 2 Tbs. butter 10 minutes. Combine cooked rice, sauteed veggies,

salt, pepper and meat in a greased casserole. Mix lightly. Pour

water and cream over, mix lightly again. Cover and bake in 350 oven 1

1/2 hours. Increase heat to 450, dot with remaining 4 Tbs. butter

and sprinkle with cheese. Bake 5 minutes longer. This is both a

culinary and a coronary delight.
