Low-Fat Bread Pudding

12 slices whole wheat bread, cut into 1/2" cubes
2 cups fat-free milk
4 egg whites
3 Tablespoons sugar
2 Tablespoons margarine, melted
1 Tablespoon vanilla
2 Tablespoons ground cinnamon
1/2 cup raisins
Preheat oven to 350-degrees F. Prepare a 2-quart casserole dish by
lighting oiling the inner surface; set aside.

Blend together milk, egg whites, sugar, margarine, vanilla and
cinnamon in a large bowl. Add bread and raisins. Pour the mixture into
the prepared casserole dish. Bake 35-to-45 minutes or until top is
well browned. Cool on wire rack. If desired, garnish with chopped
pecans or almonds.
