Trini Chicken Pelau



2 1/2 - 3 lbs. Chicken pieces seasoned with

salt, pepper, chives, parsley, 1 tsp. of Worcestershire

sauce, 1 tsp. soy sauce, 1 tsp. of ketchup.

2 cups brown rice, washed

2 cups coconut milk

2 cups water

1 large onion sliced

1 1/2 cups of fresh or frozen pigeon peas

2-3 tsp. vegetable oil

1/4 - 1/2 cup sugar

salt and pepper to taste

Hot pepper (optional but I strongly recommend)



Heat oil in a large heavy iron pot or skillet. Add sugar and allow to

burn until dark brown. Add seasoned meat and stir until pieces are

well coated with sugar. cook for 5-6 mins. Add rice and turn until

well blended. cook for 3-4 mins more. add onion and peas and stir

fry for a few seconds. add salt, pepper, coconut milk and water.

bring to a boil, lower heat, cover, simmer until rice is cooked and

all liquid has evaporated. Add additional liquid and continue cooking

if rice is still hard.
