Pineapple Spice Loaf

Amount Measure Ingredient -- Preparation Method

2 cups flour....sifted
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon ground ginger
1/2 teaspoon ground numeg
1/3 cup brown sugar
1/3 cup vegetable oil
1 teaspoon vanilla
2 eggs
1 can crushed pineapple in juice (8 ounce



Ready, set, cook!



Into large bowl, sift together frist 6 ingredients. Stir in brown
sugar, set aside. In a small bowl, mix oil, vanilla and eggs until
well blended. Stiir in undrained pineapple. Add to dry ingredients;
stir just until moistened. Pour batter into greased 9x5x3 loaf pan.
Bake in a 350 degree oven for 55 to 60 minutes or until loaf is glden
brown and a toothpick inserted in center comes out clean. Cool in pan
for 10 minutes.

calories from fat); 11g Protein; 52g Carbohydrate; 374mg Cholesterol;
3866mg Sodium
