Default Chicken Chasseur Burger

Chicken Chasseur Burger

Ingredients:

1/4 cup mayonnaise
1 teaspoon dried tarragon leaves
1/2 teaspoon chopped parsley
1 tablespoon red onion, minced
1 clove of garlic, minced
4 button mushrooms, small dice
1 tablespoon olive oil
2 tablespoons white wine
1 pound of ground chicken or turkey
4 slices tomato
4 Kaiser rolls
4 romaine leaves

Preparation:

Combine tarragon, parsley and mayonnaise in a small bowl and blend.
Chill.

Sauté onion, garlic and mushrooms in olive oil until the mushrooms
start to brown a bit. Add the white wine and reduce by half. Remove
from heat and allow to cool. Once cooled add the onion mixture to the
chicken and blend thoroughly. Form into patties and cook until just
done. A meat thermometer inserted into the center will read 160
degrees F.

Toast the rolls and spread with tarragon flavored mayonnaise, topped
with romaine and tomato slice.
