Default Terri's Mock Raspberry Jam

Terri's Mock Raspberry Jam

5 cups mashed green tomato's

5 cups sugar

Lrg. Package Black or Red Raspberry Jell-O

1 tsp. Lemon Juice

Cook for 20 minutes, scald bottles. Put mixture into hot bottles,

hand tighten lids. Turn upside down for 20 minutes, then shake and

turn bottles upright till cool and lids seal. (I like using a food

processor or blender for the tomatoes instead of just mashing) The

chopped tomatoes look like the seeds in the raspberries. Can use any

kind of Jell-O for any flavor. You can really use your imagination

with this recipe. And use up all those green tomato's that usually go

to waste because they don't ripen before the first frost.
