Chunk Pickles



10 medium cucumbers ( 6 inch long)

8 c. sugar

2 tbsp. Mixed pickling spices

5 tsp. canning salt

4 c. cider vinegar



Wash cukes and cover with boiling water and weigh down with a plate.



Let stand overnight. Drain and cover next morning with boiling water and
repeat next two mornings.



On fifth day, drain and scrape seeds and cut into chunks.



Combine four ingredients and bring to boil, pour over chunked cukes. Let
stand in cool place for two days, stirring daily.



Drain off liquid and bring to boil. Fill sterilized jars with pickles and
pour hot liquid over them. Sterilize lids and seal. Process in hot water
bath for 5 to 10 minutes.
