Granny's Divinity (with nuts)
3 cups of sugar 1/2 cup water 1/2 cup white corn syrup 1/8 tsp salt 3 egg whites 1 cup chopped nuts (we use pecans) Combine sugar, water, syrup, and salt over low heat, stirring until dissolved. Boil without stirring to soft crack stage, 260 degrees (go to 260 no matter what stage your candy thermometer calls it). Beat egg whites until stiff; pour syrup over whites, stirring constantly with the mixer. Beat until creamy; add nuts when mixture loses gloss. Drop by teaspoons onto waxed paper (this is where you need help to get them formed). Let candy set and serve. Nuts may be omitted. Be sure to make when the weather is fair. The mixture will be very hot when you are dropping it onto the waxed paper. We always scoop some with a teaspoon and scrape the mixture off with another teaspoon so we don't burn our fingers. You will have to work fast! I hope you enjoy these as much as we always do. They are a true family tradition. |
