Default Chocolate Silk Pie

Chocolate Silk Pie

Crust Ingredients:
1 1/2 cups (about 18) finely crushed chocolate sandwich cookies
1/4 cup LAND O LAKES® Butter, melted

Filling Ingredients:
1 cup granulated sugar
3/4 cup LAND O LAKES® Butter, slightly softened
3 (1-ounce) squares semi-sweet baking chocolate, melted, cooled
3/4 cup refrigerated egg substitute (see Cook's Note)

Garnish Ingredients:
Sweetened whipped cream, if desired
Chocolate curls, if desired
Stir together all crust ingredients in medium bowl. Press on bottom
and up sides of 9-inch pie pan. Refrigerate 10 minutes.
Combine sugar and 3/4 cup butter in small mixer bowl. Beat at medium
speed, scraping bowl often, until well mixed (1 to 2 minutes). Add
melted chocolate. Continue beating, scraping bowl often, until well
mixed (1 to 2 minutes). Add egg substitute. Continue beating until
light and fluffy (4 minutes).
Spoon into prepared crust. Refrigerate at least 3 hours or until set.
Garnish with sweetened whipped cream and chocolate curls, if desired.
Store refrigerated.
Makes 8 servings.

Cook's Note: You can choose to use 3 fresh whole eggs in place of the
egg substititue. However, there is an ever-growing concern about the
threat of salmonella, bacteria that contaminate eggs and poultry.
There is no way of knowing the degree of risk when eating raw or
lightly cooked eggs. It has been recommend that immuno-compromised
patients, the very young and the elderly, all of whom are the most
severely affected when stricken, should not eat raw or lightly cooked
eggs. Those who are consuming eggs that have not been cooked to 165*F
(75*C)are doing so at their own risk.
